Barnyard Millet Curd Rice
Ingredients
Barnyard Millet - 1/2 cup
Thick Curd. - 1/2 cup
Milk - 1/2 cup
Sour cream. - 1 tablespoon(optional)
Seasoning. - Mustard, red chilli(1) &
Curry leaves, asafetida.
Oil. - 1 teaspoon
Salt - 1/2 teaspoon
Instructions
Take a half cup of millet and wash it and soak it for an hour. Then take a small pressure cooker. Add millet with one and a half cup of water to pressure cooker. Let them cook( put high medium flame till first whistle then put medium flame for two to three whistles). Wait for twenty minutes to release pressure.
Then take a wide bowl. Put the cooked millet in that wide bowl. Pour boiled milk on the millet. Mix well milk and millet. Let them cool down. After cool down add curd & salt. Mix well all those. Now add seasoning. Mix it well. Now you can enjoy millet curd rice.
Note:
Make this millet curd rice with little millet or Kodo millet too.
It should be good for two people. That means half cup millets yield two to three servings.
Usually I do boil milk before adding to millet curd rice. I don’t use unboiled milk. At least microwave the milk(luckwarm) before adding. Then only it should be good for long time in room temperature like party time or till dinner time.
