Varagu/ Kodo Millet kichadi(Uppuma)
Ingredients
Varagu/Kodo millet. - 1/2 cup
Green beans(chopped) - one handful
Carrot(chopped) - one handful
Peas. - one handful
Green bell pepper - one handful
Salt. - 1/4 teaspoon
Oil. - 1 or 2 tablespoons
Seasoning. - Mustard and Urad dal, Channa dal,
Jeera(cumin), Curry leaves.
Instructions
Take Kodo millet and wash it well then soak it for an hour. In the meantime cut all the vegetables and make a chutney or sambar. . Take a small pressure cooker add oil and seasoning. Add all vegetables. Sauté for two to three minutes. Add two cups water and soaked millet. Add salt. Mix well & Close the pressure cooker with lid. Allow to cook in medium high flame after one whistle put the flame in medium for three whistles or five to seven minutes. Then Switch off the stove. Allow to release the pressure well. Then enjoy Kodo millet kichdi with any chutney or Sambar. It is a perfect breakfast in morning.
Note:
You can make this uppuma with little millet and barnyard millet.
If you do dry fry the millets before washing & soaking it gives a good texture.
